I'm going to take a completely different viewpoint. A "weasel" one of a number of tools you can use to wind thread or yarn into bobbins or spools. They were used by anybody who had to use a great deal of thread--tailors, shoemakers, whoever. The weasel really does make a popping sound when the thread is all wound. I think this is where all the stitching, sewing allusions come from in the rhyme. You can still find these wooden gadgets in use today among handweavers and spinners, knitters, etc.
